For me, the GMAT was pretty nerve racking and you were left to your own devices to figure out the best method for study and support materials. I went with the Kaplan prep software that was advertised through the GMAT website (~$100). It worked very well actually and the realistic practice tests were useful to target weak areas.
When you are just starting out and getting back into the school groove, I think a prep course would serve a number of purposes.
1) It could be offered to anyone which would help to promote the school, its facilities and programs.
2) Provide a structured program of study to ensure a successful outcome.
3) Provide access to proven support materials to give students the best of what industry has coupled with the insight and expertise from the school.
4) Subsidize the expenses if needed with marketing budget to do this for a very reasonable cost (<1K per student).
5) For students already enrolled, this gets their feet wet. They get to check out the campus, possibly meet with instructors or advisers for the upcoming semester and go check out the campus. Make it fun and a very positive experience.
